Greek Pork Slouvaki, Salad, Tzatki, Pita & Hummus - 30 days of Healthy Eating with the Velata Raclette

In a nutshell I use my Velata Raclette almost every single day. It allow us to eat the healthiest we've ever eaten (with the fastest clean-up) so this is a post within a 30-day series on healthy eating Velata Raclette recipes and activity. Enjoy! 


Day 3: Greek Pork Slouvaki, Greek Salad, Tzatki, Pita & Hummus (Dinner):


I remember how yuck I felt after I ate my first 'American' meal after being in Greece for over a week. I've heard it before but it's so true how the food you eat can make a signifcant impact in how you feel. Mediterranean food in general is mostly healthy and organic so w're going to be bringing in a little Greek into our everyday meal plans. Tonight's meal was a good start! 


This is the best meal I can remember myself ever making! It was so good that I announced just how good, after almost every single bite! The entire dinner was all Greek, healthy and was cooked on my Velata Raclette. The secret to such an amazing meal is that I got all of the spices from Greece on my free trip with Scentsy!

I cubed lean pork and marinated it in the slouvaki rub I bought in Greece - then I skewed and grilled it on the Raclette


I also made tzatki sauce with Greek yogurt, the spices from Greece and a little lemon.




I've made a Greek salad for almost every meal after we've returned. A Greek salad doesn't have lettuce - it's simply tomato, cucumbers, Greek salad spices and sometimes red onion and olive oil. 


We've already had hummus in our dinner repertoire but usually it's store-bought. Hummus is so easy to make though so tonight I made a Mediterranean hummus with chickpeas, garlic, lemon and some finely chopped olives and spices from Greece.   


Clean-up time: 21 seconds

Roasted Beet, Pecan and Cranberry Salad - 30 days of Healthy Eating with the Velata Raclette

Day 2: Roasted, Beet, Pecan and Cranberry Salad (Lunch):


I'd never had beets until last summer when my MIL roasted them for a family picnic - they quickly became one of my favorite vegetables. For lunch beets and roasted pecans sounded yum so I simply opened up a can of beets and tossed them on the grill for about 10 minutes along with a few fresh pecans. Normally I would have drizzled a bit of olive oil but with the Velata Raclette's non-stick surface you just don't need it so instead I sprayed a light coat of Pam and saved the calories.  



As a working mom I make lunch for myself and my 2 kids and I just can't eat the same things they can eat. This is another huge selling point of the Velata Raclette for me - I only have to clean one grill surface rather than 2+ pans which leads to my favorite feature - less than 1 minute clean-up time EVERY TIME!  

To finish up I threw everything in the bowl including some chopped romaine, the beets, pecans, feta cheese, dried cranberries and a drizzling of balsamic vinegar. For dessert we had a big bowl of blueberries. 

The Velata Raclette also comes with 8 trays that slide underneath the grill surface but especially at lunch I don't need them but I don't need to remove them - they can just stay right in place.

Clean-up time: 23 seconds

Mom's Lunch Recipe:
1 can of beets (sliced or cut)
A handful of fresh pecans
1/2 a handful of dried cranberries
1/2 a handful of feta cheese
Drizzling of balsamic vinegar
1/2 a stalk of cut romain lettuce
Large handful of blueberries
1 strawberry

The Kid's Lunch:
3 turkey hotdogs
2 carrots 
Blueberries

Yield: This recipe fed 1 adults and 2 kiddos

Fitness: I completed Week 6 day 1 of my 10K trainer (I was able to skip a week) with a distance of 2.75 miles. And I'm also sticking to my routine of drinking 90 ounces of water a day. 

Okay, so this isn't me but trust me when I say that my legs look exactly like this ;)

Lemon Garlic Chicken and Seared Veggies - 30 days of Healthy Eating with the Velata Raclette

So, even as a Velata consultant I didn't jump on purchasing the Velata Raclette right away. Mostly, because I already had a sleu of other appliances that I never used (I'm not much of a cook) and didn't want to spend the money on another item just to collect dust. Boy was I wrong! 

My clients were literally raving about the Raclette so I finally ordered when we moved to Texas about 4 months ago... and I've used it almost every. single. day since then! It's by far the best kitchen purchase I've ever made! 

And it's the healthiest we've ever eaten (with the fastest clean-up) so I thought I'd do a series of 30 days of recipes and ideas for your family's healthy eating. Plus I'll also be posting my daily activity to get ready for the Scentsy Family Reunion (our national convention) 5K in July! Here's to the first of the next 30 days! 

Day 1: Lemon Garlic Chicken and Seared Veggies 


I love vegetables - even the less popular ones like brussel sprouts. And my favorite way to eat them is pan-seared but I've always had to use oil or butter to keep the veggies from sticking. The Velata Raclette has a non-stick surface that grills them to perfection without the unnecessary fat - just spray a little Pam and you're ready to go. 

The Velata Raclette comes with two grill tops - the one picture here has a smooth and ridged side - I like my meat and asparagus to have those fancy grill lines and my other veggies to be evenly seared.

I simply rubbed the chicken tenderloins in the Lemon Garlic Artisan Rub and grilled those to yummy perfection alongside the veggies.

The Velata Raclette also comes with 8 trays that slide underneath the grill surface. These are perfect for sides or Velata's ooey gooey cheese... which might be necessary when coaxing the kids to eat those brussel sprouts!  

Clean-up time: 48 seconds

Recipe:
1 green bell pepper
1 yellow bell pepper
1 orange bell pepper
1 anaheim pepper
6 baby portabello mushrooms sliced
10 cherry tomatoes sliced
1 bundle of asparagus
20 brussel sprouts sliced
5-10 chicken tenderloins rubbed with Velata Lemon Garlic Artisan Rub

Yield: This recipe fed 3 adults and 2 kiddos
