Cookie Cutter Chocolate Pancakes - 30 days of Healthy Eating with the Velata Raclette

In a nutshell I use my Velata Raclette Grill almost every single day. It allows us to eat the healthiest we've ever eaten (with the fastest clean-up) so this is a post within a 30-day series on a healthy eating Velata Raclette recipes. Enjoy!

It was a chocolate pancake kind of morning - add some fun cookie cutter shapes and I had some happy kiddos! Shhh... I substituted in wheat flour, dark brown sugar and applesauce instead of oil for a healthier version. And with the added cocoa no syrup was needed.

Here are our finished pancakes - the kids ate everything except one moose leg :)

The Velata Raclette makes the very best pancakes EVER - with a perfect cook-through and a bit of a crispy outside! And I love that I can cook more than one pancake at a time for my impatiently-hungry kids.

Spencer chose a moose pancake first and trotted him around the table before mauling one of his hooves off with a distinct humphhh sound.

Cooper chose a Texas-shaped pancake first but he devoured it so quickly that I couldn't get a picture quick enough. This is pancake #2 of 5!

Clean-up time: 9 seconds (yes, that's 9 seconds - this grill makes momma very happy!). PS: You can get this $140 grill for FREE with our June Incentive - message me for the info (offer ends June 30)!

Recipe:
1 C wheat flour
2 TBS dark brown sugar
2 TSP baking powder
1 egg
1 C milk
2 TBS applesauce
2 TBS cocoa (no extra sugar is needed)

Yield: This particular recipe fed 1 mommy, 1 hungry toddler and a baby. But this one is totally flexible. You can alter this recipe by using the mixing instructions on the pre-made mix or make it from scratch like we did here.

Coriander Herb Shrimp & Veggie Grill - 30 days of Healthy Eating with the Velata Raclette

In a nutshell I use my Velata Raclette almost every single day. It allow us to eat the healthiest we've ever eaten (with the fastest clean-up) so this is a post within a 30-day series on healthy eating Velata Raclette recipes and activity. Enjoy!

My entire family loves shrimp. Before I might have bathed the shrimp is a mixture of olive oil, butter, garlic and herbs but this is the new and improved (and very low calorie) version.

I simply defrosted some frozen shrimp, cut up some peppers, onions, tomatoes and mushrooms and mixed it all up with some of the Velata Coriander Herb Artisan Rub. Then I threw it on the Velata Raclette for about 15 minutes. That's it!

Clean-up time: 25 seconds

Recipe:
1/2 pound frozen shrimp
Any fresh veggies on-hand including peppers, tomatoes, onions and mushrooms

Yield: This one is totally flexible. You can alter this recipe by using the mixing instructions on the pre-made mix or the recipe you use to make it from scratch.

Pancakes with Toasted Brown Sugar Bananas - 30 days of Healthy Eating with the Velata Raclette

In a nutshell I use my Velata Raclette almost every single day. It allow us to eat the healthiest we've ever eaten (with the fastest clean-up) so this is a post within a 30-day series on healthy eating Velata Raclette recipes and activity. Enjoy!

My kids LOVE pancakes (who doesn't, though) but they are only getting half the story because we don't typically use syrup. Instead we use the juices from our fruit of choice to moisten up the hotcakes. Pancakes get a bad rap but they can be healthy and delicious!

I can't explain it but this Velata Raclette seriously makes the best pancakes I've ever had. Somehow it perfectly cooks the inside without over drying and then sorta' crisps the outside. It's pure perfection!

The dishes under the main grill are great for individual servings of fruit. This morning we did bananas but you could have 8 different fruit choices to choose from. Yummo!

Clean-up time: 19 seconds (yes, I'm serious... 19 seconds!)

Recipe:
Pre-mixed White or Wheat Pancake Mix
Bananas mixed with a touch of brown sugar and lemon

Yield: This one is totally flexible. You can alter this recipe by using the mixing instructions on the pre-made mix or the recipe you use to make it from scratch.

This weekend the family and I went to Houston to help my brand new team member with her Scentsy launch party! (PS: She did so well that she earned $375 in free Scentsy, $250 paycheck, earned a 5% raise and promoted! You can do it too!) While in Houston we visited the Space Center and for lunch I had a roasted red pepper pita pocket that had the potential to be pretty good so I took a crack at it and it was AH-mazing!

This meal was so low in calories and high in protein, fiber and yummy goodness that it's almost ridiculous - many thanks to the Velata Raclette!

I cubed chicken and mixed it up with a little Velata Lemon Garlic Artisan Rub and threw it on the pre-heated Raclette. Meanwhile I made the quinoa and homeade hummus using chickpeas, roasted red peppers, garlic and lemon. (See my Mediterranean hummus here)

Clean-up time: 48 seconds (why so long? I had to refill the baby's drink while cleaning the grill top :)

Recipe:
Chicken: 4 chicken tenderloins, cubed + Velata Lemon Garlic Artisan Rub
Hummus: Chickpeas, Lemon, Garlic, Roasted Red Peppers
Quinoa: Just water and the yummy, super grain!
2 pieces of Naan, quartered

Yield: This recipe fed 2 adults, 2 kiddos and we have plenty of leftovers for lunch - yay!

Greek Pork Slouvaki, Salad, Tzatki, Pita & Hummus - 30 days of Healthy Eating with the Velata Raclette

In a nutshell I use my Velata Raclette almost every single day. It allow us to eat the healthiest we've ever eaten (with the fastest clean-up) so this is a post within a 30-day series on healthy eating Velata Raclette recipes and activity. Enjoy!

Day 3: Greek Pork Slouvaki, Greek Salad, Tzatki, Pita & Hummus (Dinner):

I remember how yuck I felt after I ate my first 'American' meal after being in Greece for over a week. I've heard it before but it's so true how the food you eat can make a signifcant impact in how you feel. Mediterranean food in general is mostly healthy and organic so w're going to be bringing in a little Greek into our everyday meal plans. Tonight's meal was a good start!

This is the best meal I can remember myself ever making! It was so good that I announced just how good, after almost every single bite! The entire dinner was all Greek, healthy and was cooked on my Velata Raclette. The secret to such an amazing meal is that I got all of the spices from Greece on my free trip with Scentsy!

I cubed lean pork and marinated it in the slouvaki rub I bought in Greece - then I skewed and grilled it on the Raclette.

I also made tzatki sauce with Greek yogurt, the spices from Greece and a little lemon.

I've made a Greek salad for almost every meal after we've returned. A Greek salad doesn't have lettuce - it's simply tomato, cucumbers, Greek salad spices and sometimes red onion and olive oil.

We've already had hummus in our dinner repertoire but usually it's store-bought. Hummus is so easy to make though so tonight I made a Mediterranean hummus with chickpeas, garlic, lemon and some finely chopped olives and spices from Greece.

Clean-up time: 21 seconds

Recipe:
1. Join my Scentsy team here
2. Work with me as I mentor you and help you earn the next incentive trip.
3. Buy your own spices at whatever exotic location Scentsy sends us next!

Yield: This recipe has taken 2 adults and 2 kiddos to Tokyo Disney, 2 adults to Greece, Cancun and Whistler, Canada!

Roasted Beet, Pecan and Cranberry Salad - 30 days of Healthy Eating with the Velata Raclette

In a nutshell I use my Velata Raclette almost every single day. It allow us to eat the healthiest we've ever eaten (with the fastest clean-up) so this is a post within a 30-day series on healthy eating Velata Raclette recipes and activity. Enjoy!

Day 2: Roasted, Beet, Pecan and Cranberry Salad (Lunch):

I'd never had beets until last summer when my MIL roasted them for a family picnic - they quickly became one of my favorite vegetables. For lunch beets and roasted pecans sounded yum so I simply opened up a can of beets and tossed them on the grill for about 10 minutes along with a few fresh pecans. Normally I would have drizzled a bit of olive oil but with the Velata Raclette's non-stick surface you just don't need it so instead I sprayed a light coat of Pam and saved the calories.

As a working mom I make lunch for myself and my 2 kids and I just can't eat the same things they can eat. This is another huge selling point of the Velata Raclette for me - I only have to clean one grill surface rather than 2+ pans which leads to my favorite feature - less than 1 minute clean-up time EVERY TIME!

To finish up I threw everything in the bowl including some chopped romaine, the beets, pecans, feta cheese, dried cranberries and a drizzling of balsamic vinegar. For dessert we had a big bowl of blueberries.

The Velata Raclette also comes with 8 trays that slide underneath the grill surface but especially at lunch I don't need them but I don't need to remove them - they can just stay right in place.

Clean-up time: 23 seconds

Mom's Lunch Recipe:
1 can of beets (sliced or cut)
A handful of fresh pecans
1/2 a handful of dried cranberries
1/2 a handful of feta cheese
Drizzling of balsamic vinegar
1/2 a stalk of cut romain lettuce
Large handful of blueberries
1 strawberry

The Kid's Lunch:
3 turkey hotdogs
2 carrots
Blueberries

Yield: This recipe fed 1 adults and 2 kiddos

Fitness: I completed Week 6 day 1 of my 10K trainer (I was able to skip a week) with a distance of 2.75 miles. And I'm also sticking to my routine of drinking 90 ounces of water a day.
